I have to admit, I was a little iffy about trying chia seeds at the beginning. I’m pretty big on texture, and the whole jelly-like appearance made me want to run in the other direction. But after one of my friends told me she drinks them in her water every morning, I have to admit I was curious! While not ready to try out the whole Chia Fresca drink yet, I did venture into my cupboard to make chia seed pudding.
After looking up a few recipes online, I decided to try out a chocolate version, because really who doesn’t love a little chocolate pudding action. Here are the ingredients that I started out with:
1 1/4 cup almond milk
1/4 cup chia seeds
3 tbsp raw cacao powder
1 tablespoon organic maple syrup or agave
After gathering all my ingredients, I combined them into a glass, making sure to mix them up a little. I then put the lid on and placed them in the refrigerator overnight (4 hours minimum) until it had a thick, pudding-like texture.
When you take it out in the morning, garnish with fruits and nuts of your choice (I chose frozen blackberries and walnuts).
All I have to say is yum! I can totally see why everyone is so addicted to it, and with their high density of omega 3 fatty acids, their high protein count, and their anti-inflammatory qualities they definitely make me feel like I’m eating healthier. They might just be my new breakfast go-to.
