It’s no secret that we are huge Siena Tavern fans here at L&C. But for those who want some of Chef Fabio Viviani’s gnocchi or Tuscan kale Caesar salad for a weekday lunch, there is now another spot where Chicagoans can go to taste his “from scratch” dishes. Rustle+Roux café at The Franklin now boasts one of Chef Fabio’s first ever fast causal concepts called Mercato by Fabio Viviani, catering to Loop lunchers during the work week.
Chef Fabio was on hand this Monday at the café’s grand opening, signing cookbooks, giving fans samples and raffling off a number of prizes to help kick off his Mercato by Fabio Viviani opening in true Fabio style. Known for his turns on Top Chef and his infectious personality, Chef Fabio is more than happy to bring an accessible but upscale dining experience to his Chicago fans.
He says his mantra in the kitchen is to “”Cook as simple as possible, with your own twist,” and that is evident in his menu of fresh made pastas, pizzas and salads. Personal favorites from his menu at Rustle+Roux include the proscuitto and pear pizza, which features 40-day aged proscuitto, and the meatball sandwich, which comes from his mom’s recipe! All the dishes are fresh Italian classics anyone would love, but with that special Fabio flair.
But Mercato is not the only delicious station on the menu at Rustle+Roux!
In addition to the Mercato concept, there is also Mercadito Taqueria, a Mexican station from Mercadito Hospitality Group, illy coffee, as well as a grill, salad bar and other stations run by Eurest Foodservice.
Executive Chef Benjamin Browning, who oversees all stations in the café, is excited to offer new menu items, both from Chef Fabio and his own Eurest team, to Loop workers.
“It has been great to partner with Chef Fabio Viviani and the team at Mercadito Hospitality to offer their top notch Italian and Mexican dishes,” Browning said, “And the whole Rustle+Roux menu will be constantly changing. There will even be a pop-up station that will change themes weekly, offering everything from barbecue to Asian noodles.”
Rustle+Roux is located in the second floor mezzanine of The Franklin at 227 West Monroe, between Franklin and Wells. The café is open Monday through Friday and serves lunch from 11 a.m. to 2 p.m. Come by for coffee, lunch or a snack!
